City Kidz and Cornell University Partner on Combining College Dreams and Ice Creams

City Kidz Ice Cream café in downtown Jacksonville is collaborating with Cornell University to provide local middle and high school students’ access to an innovative Food Science Program.  The program, hosted by Clinton Bush of City Kidz, is a Cornell approved curriculum that teaches the students about Food Science in a hands on workshop.  The program culminates in the students own Ice Cream being marketed and sold at local Publix and Winn Dixie stores.

This is an opportunity for students who are interested in a career in food science and food technology to receive hands-on instruction from Cornell University Food Science Department instructors and food scientists from international corporations. The students will meet ten times between now and March 5th to learn how ice cream is made, formulate a recipe for an ice cream flavor, and learn how to package and market their product.

The first class was conducted by Matt Patrick, the VP of Research and Development of TIC Gums, as an introduction to the program and ice cream. He shared his experience in the food science field and to the students delight led a sensory evaluation of 8 different kinds of ice cream.  

The next class is the last one available for students to join the program and will be on the basic chemistry of milk and ice cream.  The class will be taught via webinar by Cornell U. Food Science professors.  The Dean of the Food Science Department, Alicia Orta-Ramirez PhD, said she was “excited about collaborating with City Kidz [and] to introduce the field of Food Science to middle and high school students”.

Cornell University’s Food Science Department offers comprehensive undergraduate and graduate programs that prepare students for leadership positions in the food industry, academia, and government.  Their research programs are designed to expand understanding of the biological/microbiological, chemical, physical, sensory, nutritional, and engineering properties of foods and beverages. 

City Kidz at the corner of 3rd and Main Street was founded by Clinton Bush in 2006 and since then has been a shining jewel in the cities downtown restaurants.  Noted for programs on extending financial literacy to inner city youth Bush has now set his sights on the expansion of the Food Science major.  The U.S. only produces roughly 300 graduates with degrees in Food Science but with Bush and Cornell’s collaboration more bright students will be aware of this outstanding profession.
